I find the 500D a bit small on its own but with the grip attached its a fantastic fit. For example if you were an landscape shooter you would be perfectly happy with a 500d or 550d unless the camera is to small for your hands. What do you shoot? are you a casually photographer etc etc are all important aspects to choosing the right camera. All you have to ask yourself is if you need those things or not. What your paying for is increased durability, erganomics and camera features such as drive speed and Auto focusing. SO this means the 500D, 550D, 40D, 50D, 7D all give about the same quality final result. Image quality is going to be about the same with any modern crop sensor.
Its important to note that the ISO performance is only slightly better, but it is better. 7D - Higher FPS, video, I BELIEVE better weather sealing (but don't quote me), better AF system, better ISO performance, wireless flash sync.
